		<description>You are right! there is nothing like real italian pizza and especially from the south. I&#039; m from Bari on the south-east adriatic coast and as you say most pizzerias do it hand made and with a wood fire oven. i have to say though that in our region we use mainly cow mozzarella (vacca) not buffalo as you say. that&#039;s more used on the the west coast (near naples) infact in our region, puglia, we produce a lot of cow milk and cheeses while on the west coast(naples area) they are more famous for their buffalo mozzarella. Round pizza in rome is not good on my opinion but they do a tasty sliced one to take away in the streets. i have tried very good pizza all over italy and i&#039;m italian but sometimes it happens there too that you get a bad one, especially in tourist traps. in italy i have to say pizza is much less caloric than north american pizza. we use half the cheese, don&#039;t use much salami and the crust is thin. in our country pizza is almost considered a very healthy food, totally the opposite reputation that it gets in north america</description>
